Xclusive Taqueria Moderna, a modern elevated Mexican cuisine restaurant, opened Monday, September 16th at Terrace Shops in Ladera Ranch. The new restaurant is owned and operated by three award winning, fine dining executive chefs including Golden Foodie Award winner Chef Manny Velasco, Food Network Star Chef Chris Tzorin, and Chef Eddie Perez.

The 1,500 sq. ft. restaurant offers an intimate atmosphere that prepares traditional Mexican dishes, as well as fusion-style plates with a sophisticated presentation. The menu is constantly changing as all dishes are prepared using fresh, local, organic, sustainable, and seasonal ingredients, with gluten free and vegan options available, all at family-friendly price points.




Manny Velasco

Executive Chef

Chef Manny Velasco was chef at Savannah Chop House. With major staying power, he has been at the top through ten years and five executive chefs. Manny’s enthusiasm and seemingly endless energy are a requirement for his busy work life. In addition to his full time position at Savannah, Manny works a complete morning shift as executive chef running the brand new Xclusive Taqueria Moderna.

Manny is devoted to running the back of the house. He and Executive Chef Chris Tzorin make a great team. When they create dishes together, Manny is passionate about making sure the food and the cooks are ready to go, while Chris is more likely to be among the customers making sure they love the menu. Since the age of seventeen he has worked all around Orange County, from Marie Calender’s to the Montage. Manny loves working at Xclusive Taqueria Moderna and makes sure that he puts his touch on every plate that goes out.




Chris Tzorin

Executive Chef

Chef Chris Tzorin was born to be a chef. His ambition drives him to go beyond his dreams, because to him nothing is impossible. He is a second generation chef; his father Chef Luis Tzorin mentored Chris beginning at the age of 15. His passion for the culinary industry began when he started helping his father in the kitchen at work, while at home he helped his mother make traditional enchiladas and special Mexican sauces including her signature Mole. He attended The Art Institute of California in Orange County to further his career.

By age 20, was already Executive Chef at The Beach House in Dana Point. His extensive resume includes Chateaux, 195 Downtown Grill and Savannah Chop House. Now Chef Chris is bringing his inspiring and energetic spirit to Tempo Urban Kitchen in Brea and Tempo Anaheim Hills.




Eddie Perez

Eddie Perez is one of the 3 Chef/Partners owners of Xclusive. Heriberto Rivera – Chef with 20 years experience (National Chef and administrator for Rubys Restaurant. Family man, full of love ❤️ for food 🥘 and people. “My Dream is to own a restaurant with a culinary team, doing what we love for people that will fall in love at first bite”.
